Arthur’s Mini Courses
Our mini courses are designed for the most curious, thoughtful, and hungry eaters! Each course features two books and two events with the goal of going beyond the basics on some of our favorite topics in food and beverage.
Mini Course: Tea
Tea as a topic is as vast as its many flavors and blends. In this course, we’ve decided to focus on two areas: the craft of making teas and the traditions of teatime.
More specifically, this curriculum is designed to provide a fundamental knowledge of tea and tea blending through our first book and by taking you behind the scenes at Saratoga Tea & Honey’s warehouse. This course will also celebrate and explore the traditions of teatime, as well all bake from our second book and come together for a teatime pot luck, sharing baked goods we’ve made from the book’s recipes.
$150 course fee includes: 2 books, 2 events, as well as an additional list of recommended reading, watching, and listening to deepen your tea knowledge and rituals!

Book 1
Good & Proper by Emilie Holmes and Ben Benton
Discover how to brew the perfect cup of tea, considering water type and temperature, timings and strength. Learn the difference between oolong and jasmine tea, and how to make your own blends and tisanes. The book also includes recipes for different tea-based drinks and cocktails.

Go behind the scenes at ST&H’s warehouse, where owner Hayley Stevens will share her process. She will also introduce us to the flavors of tea and how to blend and brew tea. Finally, participants will create their own blend, learning how to achieve balance and experiment with different pairings.
Book 2
Afternoon Tea at Home by William Torrent
80 stunning recipes and inspiration for how to host and bake for the ultimate afternoon tea party with instruction from master patissier Will Torrent. Starting with a brief history of British afternoon tea, Will then offers up recipes for jams, spreads, butters and curds – everything you might need to serve with an afternoon tea.

Pot Luck Party

Saturday 6/17, 2 - 4PM
To cap off the course, we’ll gather together sharing dishes each member has made from Afternoon Tea at Home and discussing our new found tea knowledge, as well as any questions that may have come up in the course of your reading, field-tripping, and cooking.
